Tuscan Beef Peposo Recipe
This rich and hearty stew is amazing when eaten during the cold winter months. It is a simple dish of beef, stewed with tomatoes, wine and spicy peppercorns. Its origins date back to medieval Italy and the construction of the famous dome of the cathedral Santa Maria del Fiore in Florence. The Peposo used cheap cuts of beef and was eaten by the furnace workers who produced the tiles for the cathedral roof, slow cooking the dish in terracotta pots in the cooler corner of the furnace.
